Steak to die for

Meat rubbed in Coffee, Chocolate and Love
All we need. 


Beer with chocolate, coffee and steak- how can it be bad? It can't.  It is as delicious as it sounds, a little sweet, a little spice and a nice rich finish. haha.  
This has become one of the signature ways my boyfriend and I like to prepare steak and we are becoming pros!  Although, the only thing we beg to differ with each other is how to pair it. I love steak and red wine, but he likes to pair it with the same stout we marinate it in.  The choice is yours.
With a few different variations of process and coffees, I think we have decided on our favorite.  These photos are from one of our first attempts, therefore after more experience  we discovered the Starbucks Estima blend was good but almost too pungent.  I personally liked doing it with the expresso best. 

So here it is, and as I explain on my "noms" page, I make all of this stuff up and don't measure anything.  I eye it and these measurements are adapted to the best of my ability.






Ingredients:

Steaks (We use 2 Sirloin cuts)

2 Cups of a Stout Beer (We like Long Ireland Breakfast or Imperial)
{Put the stout in a dish with a dash of worcestershire sauce and 1 Tbsn of garlic}


For the Rub:
1/2 Cup of Expresso
2 Tbsp of Coco Powder
2 Tbsn of Brown Sugar
1 Tbsn of Garlic Powder
2 Tbsn of Onion Powder
Dash of Chili Powder*
Dash of Crushed Red Pepper*
Dash of Paprika*
Dash of Black Pepper*
Dash of Salt*
(*A Heathy dash of each slightly varying on how spicy or salty you want it)


The Procedure:

Tenderize the steaks a little before marinating it in the stout and garlic mixture.

Let it sit and think about how awesome it is going to be.  Let it sit at least 20 minutes, longer is better, you must wait for all good things.  If you don't want to soak the steak in beer, you can just simply coat it lightly with a little olive oil before you rub the rub. ;)

Make sure the Expresso Rub is well mixed, then gently rub the entire steak in the dry rub making sure to coat fully and as evenly as possible.  Then Grill it to your desired temperature. I believe in a nice medium-medium rare steak. Yum!
