the Simple Kind of Lunch Salad

The Perfect Easy Brunch
{spinach, tomato, sliced almonds & goat cheese over spinach
 topped with sautéed mushrooms, onions & an over-medium egg}

Simple, crisp and light, but rich  -delicious twist on how to eat an egg.  I actually spent most of my life allergic to eggs.  I was deprived of enjoying an egg sandwich and had never experienced everything an omelet had to offer until I was almost 20. Then it was on.  I don't know how I lived without this staple.

I love Egg Sandwiches, Scrambled Eggs, Eggs Benedict, Omelets, and of course the most delicious heart attack: the Egg on a burger, so why not throw one on a salad too.  I like to eat rich, so when trying to eat a little lighter and more balanced I feel this is a good compromise.  While slowly bettering what I eat daily, I will always be sure to never cut on the flavor. So this is my kind of healthy.

WHAT YOU WILL NEED:


-spinach and kale ( or mixed greens )

-hand full grape tomatoes ( red and/or yellow )

-hand full honey roasted sliced almonds

-2 tbsp goat cheese

-2 drizzles balsamic vinaigrette -Brianna's New American Dress 
( or olive oil,vinegar, with herbs )

-1 egg

-minced garlic

-salt and pepper




DO IT UP:   

SAUTEE mushrooms with garlic, balsamic and a touch of olive oil.  Season lightly with salt and pepper.  Then put the mushrooms aside and leave the balsamic and garlic residue.

TAKE the heated pan and add a little butter. I feel like you need butter for  eggs and for a healthier substitute I love Smart balance.  

BREAK egg in the pan and use a rubber spatula to push in the edges of the egg.

PLACE greens in a bowl and dice tomatoes.

DRIZZLE a little balsamic over the sunny side of the egg.

FLIP the egg and cook over medium.  Unless you like it over easy, then take off right away.



DRESS lightly and toss lettuce with 1/2 of the tomatoes and a little goat cheese. Then place the egg, the mushrooms, the rest of the tomatoes, almonds, goat cheese crumbles and a little salt and pepper. 


LASTLY drizzle a a touch of dressing over the egg and enjoy.  For the bread lover like my boyfriend I added a garlic toasted whole wheat english muffin.
